Lesson Overview
Understand the temperature danger zone, probe and calibrate a thermometer correctly, and control cooking, hot holding, cooling, and reheating so bacteria never get the time they need.
The danger zone
Bacteria need warmth, moisture, and time. Between 5 °C and 60 °C (41 °F and 140 °F), harmful bacteria multiply rapidly, and under good conditions a population can double every twenty minutes. That range is the temperature danger zone.
Food does not become unsafe the instant it enters the zone. It becomes unsafe through accumulated time. Every minute a tray of prepared ceviche spends on the counter adds to a total that never resets. Brisa Laman's working limit is four hours of cumulative time in the danger zone, after which food is discarded. It is not returned to the fridge.
The practical consequence: prepare in small batches, take from the walk-in only what you need for the next thirty minutes, and return the rest immediately.
Using the thermometer properly
A probe thermometer is only as accurate as its handling. Clean and sanitize the stem before and after every single use, and wipe with a sanitizer wipe between different products.
Insert the probe into the thickest part of the food, avoiding bone, fat, and the base of the pan. For thin items, insert from the side. Wait for the reading to stabilise before recording it. For soups and sauces, stir first, then read from the centre.
Calibrate with the ice-point method at the start of every week and after any drop. Fill a cup with crushed ice, add cold water, stir, and insert the probe without touching the sides. It must read 0 °C (32 °F) within one degree. If it does not, adjust it or take it out of service and tell Chef Dominic.
Cooking, holding, cooling, reheating
Cook poultry to 74 °C (165 °F). Cook minced and ground meats, stuffed items, and leftovers reheated for service to 74 °C (165 °F) as well. Whole cuts of meat and fish reach 63 °C (145 °F). Confirm with the probe, not by colour and not by feel.
Hot holding means 60 °C (140 °F) or above, checked and recorded every two hours. A bain-marie holds hot food; it does not heat cold food.
Cooling is where most kitchens fail, so Brisa Laman uses two stages. Bring food from 60 °C down to 21 °C (140 °F to 70 °F) within two hours, then from 21 °C down to 5 °C (70 °F to 41 °F) within a further four hours. Six hours total. Speed it up by dividing into shallow metal pans no deeper than 5 cm, using an ice bath with stirring, or an ice paddle in liquids. Never cover food tightly while it is still cooling, and never place a hot stockpot directly into the walk-in; it will warm everything around it.
Reheat once only, rapidly, to 74 °C (165 °F) within two hours. Food that has been reheated and not served is discarded.
Recording and reporting
Log walk-in and freezer temperatures at opening, mid-shift, and closing. Log cooking and hot-holding checks on the temperature sheet. A log that is filled in from memory at the end of the night protects nobody.
If a unit reads outside its range, tell Chef Dominic immediately, move the product to a working unit, and record the corrective action. "A number you do not write down is a number you did not take," he says. "And food you are unsure about does not go to a guest."
